ENGINE FINALLY IN! which exhaust gaskets to use?

The engine is finally in my Plus 2 prepping for vintage race (maybe)/street and I have a few questions that really didn't have definitive answers in the forums.
I have two different types pf exhaust header gaskets, a gray fiber style and a semi-metallic style (metal on one side, fiber on the other). Whicj do you recommend? If it is the semi-metallic, which side towards the header. The headers are ceramic coated inside and out.
Any sealant recommended?

Andy,
Another alternative to the two types of exhaust gaskets that you have. Metal both sides with fibrous material layered between. I bought these from a VW restoration business restoring air-cooled VWs. Very high quality, and I fitted them dry.

Thanks for the help everyone. I can always count on the forum.
It has been fifteen years since I have built a Twincam motor (yes, I know it's a engine, not a motor, but motor sounds better).
I hope to start the engine... err... motor... this weekend to see if it leaks... I mean where it leaks... I mean how it leaks..
I'll keep you all posted. Or, if you see a tower of smoke coming from the Fort Worth, Texas compass point, you'll know that you'll be able to buy a lot of great spares soon.

I've found that VW ones need a bit of relieving of the bolt holes to make them fit..... a bit fiddly
