From wheel mating surface, to bearing/upright mating surface
I am guessing the baby?s rear is near three inches width/thickness
+2 about three and one half inch width/thickness
Yes, I just had mine apart. Unfortunately did not record or think to record this
Could someone please confirm one or the other

On an Elan hub the wheel mounting face is approx 1.150" from the inboard face, the overall thickness is, as you say 3". And yes, the +2 dimensions will be .5" greater.
