Hi John,
I just push a piece of long hose, maybe old garden hose might do, over the top of the fuel pipe. It doesn't need to be that tight a fit. I then tape it up high up the bulkhead to windscreen height with gaffer tape. You just need to make the end of the pipe higher than the fuel level in the tank whilst you have the engine out.

I had the same problem when I went to pickup my Plus2. When rolling it down the driveway. to the trailer sans engine, fuel started pouring out of the disconnected line. Since I would be installing a 2L Zetec, an electric fuel pump was necessary. I wound installing an electric solenoid cut off valve in the trunk/boot prior to the new fuel pump. The valve operates with the activity of the pump, so the valve is always closed when the ignition is in the off position. At the same time I installed an inertia switch before both the valve and the pump. Same sort as is used in some Ford grocery getters, picked up at one of the local Pick-a-Parts.
