Weber 151, should be fitted with the following parts. 56 64750.003 the adjusting screw with longer shank. Part 46 58000.006 cup shape washer. Part 41565.002 sealing O ring. These components provide a solution for air being drawn in around part 56. adjusting screw.

Putting grease around the screw isn't a fix. If it didn't need grease before to run properly it shouldn't need grease now. The grease is a band aid cure of the symptoms and not a root cause fix.

You likely have an air leak somewhere if the grease improved the situation. Did you check the carb to head sealing rings?

Correct, all 151's should have the cup washers and O rings to stop air leaks like this.

Are the air bleed valves closed or have they been adjusted.

As mentioned above these carbs should have the longer needle, cup and seal washer, although the carbs are only a year old, have you checked the condition of the O ring sealing washer. Sometimes the material they are made from can be of inferior quality and may not then create a good seal. If the grease you put around the screw gave an improvement this seems to indicate you you have found part of the problem, so perhaps the seal needs replacement, worth checking
