Engine Temp & Thermostat Rating

My rebuilt engine seems to run at about 90 degrees on a warm day whist driving according to the gauge reading. Does that sound ok and am I correct in assuming that the engine would run a little hotter till it is bedded in? Also what is the recommended thermostat temp rating for UK cars? I think mine currently has 82 degrees fitted.

I would double check the calibration of the temp gauge with an external thermometer (e.g. for that I use a thermocouple that plugs into a multimeter) : if temperature goes beyond the set point only driving (and not racing, or up a strong hill...) I would make sure timing is not too advanced, carburetion rich enough (plug color) then that the radiator is clean and flows well. My engine runs around 75?C, and barely goes up even when it is 30?C outside.
