The +2 restoration continues at a glacial speed.

Just mounted the diff with a brace bar (already on the car previously) that was fitted before with all the washers.

My understanding is that if a brace is fitted then run with one less washer? So I've got the bottom of the frustacon running straight up to the brace bar without a washer.

Please see below and if you would, let me know if you think that's sitting OK in the chassis? I was just thinking it looked quite 'high up'.

I’ve understood at least one washer should be used to limit the ‘rock’ in the mounting. Looks like more than enough room to fit one.

Whilst I notice that your car is a plus two, Brian Buckland recommends fitting the diff as high as possible without actually touching the chassis as the frustacones will sag in service, he also thinks that the large washers should be retained, as the stiffening bracket does not completely cover the rubber of the frustacone.
