What is the recommended "stuff" to line the underside of the bonnet with.
I've noticed some that are shiny finish, I assume to be reflective?

Some more modern noise insulation would be useful as well. Surely there are better available
than the venerable felt.

I found some black adhesive stuff via Amazon, same as the shiny stuff but black,

Have not used it yet

but also bought some shiny stuff and it sticks like the dickens

Don't know whether we're talking Elan or Elan Plus 2. If the latter, my 1970 car came from the factory with this:

There is a "regular" Hardura with a thinner layer of "felt" under it, but my car definitely had at least a 1/4" of felt under the pebble grained vinyl.

If you can get the Alloy backed stuff, it's not so much for sound deadening but more to stop the bonnet getting to hot. The Alloy backing reflects allot of the heat, first attempt on my car i used Dynamat but that didn't have the alloy backing and it looked tatty in no time, so i replaced it with the same stuff shaun has on his car (much better).

Probably the simplest way to protect the bonnet would be by forming some air vents along the edges.

It was a plan, (on a spare bonnet), before Toad became such a pain in other ways.

Did the Elan ever have a bonnet liner.. Mine is just painted with black paint?

There is a big thread about that subject, Some did and some didn't. Guess it depended on what the guys mood on the day it was assembled.

Most were ripped off anyway because the felt used to sag in the middle, that said GRP resin dries out with heat making the GRP very easy to crack..... Some say Cellulose handles heat better than modern paints and other say it's modern traffic that causes the bonnet to heat soak too much drying out the GRP resin causing it to stress fracture easily in flex areas. As for me i know GRP hates prolonged exposure to heat and seen what it did to the Inner wing on my 2 seater (resin turned to dust needing quite a large repair) so i do my best to keep the engine/exhaust heat away from the GRP as much as possible.
